Slow Cooker Cajun Stew is a perfect weeknight meal or bring it as a potluck dish to a party. The base recipe calls for the main ingredients – carrots, celery, onions but you can mix it up – add mushrooms, peppers, zucchini or whatever you have on hand.

Slow Cooker Cajun Stew
1 lb of turkey kielbasa sliced ½ inch thick
1 medium onion sliced into moon shapes
2 carrots finely diced
4 gloves of garlic minced
3 celery stalks finely chopped
1 pepper – either orange or yellow diced
½ lb of any sort of mushrooms coarsely chopped
1 can of diced tomatoes
1/8 teaspoon cayenne pepper
1 lb large shrimp peeled and deveined
1 cup of chicken or veggie broth
Place all the ingredients except the shrimp into the slow cooker, cover and cook until the veggies are tender – about 7 hours on low or 3 hours on high. Each slow cooker is different so you can judge for yourself. About 30 minutes before you are ready to eat, add the shrimp.
Serve with rice, couscous, barley or quinoa.
