REAL FOOD Weekly Menu Plan 3.16.15

Last week I tried a few new recipes that were a hit with most of us. I think my favorite from last week was the Chicken Fajita Bake. It was super easy to put together and I could make it ahead of time and just pop it back in the oven to warm up so it was ready to eat after my kids came home from Lacrosse practice. We are now into Spring sports. I have 2 boys in 2 sports each, so our weeknights are going to be very busy with practices almost every night. What are some of your favorite “healthy” easy meals that you make for your family on those busy weeknights?

REAL FOOD Weekly Menu Plan 3.16.15

Monday: That Shrimp is still in the freezer so I am making a point to make Sesame Shrimp this week. I will be serving it with Edamame and rice.

Tuesday: With a last name “O’Boyle” you know we will be celebrating St. Patrick’s Day! I am trying my hand at Bangers and Mash, hoping my crew likes it!

Wednesday: I am taking my oldest son to the play Annie, so my husband and youngest are on their own for dinner…that should be interesting!

Thursday: My boys have been begging for Sloppy Joes so it’s on the menu for this week, along with some homemade fries. BTW…DON’T buy sloppy joe mix because it’s SO EASY to make your own.

Friday: Our Meatless Mondays have turned into Meatless Fridays because of Lent. This week we are keeping it easy with a one pot pasta recipe that I’ve made before and the family loved it.

Saturday: I saw this Chicken and Wild Rice Soup recipe and it looked so yummy! Serving it with some crusty bread.

Sunday: I am teaching a Cooking Class late in the afternoon so I am throwing together a Chicken Curry in the slow cooker and serving it with our favorite Naan bread.

Just remember when you are feeling a bit overwhelmed with “life” a little organization goes a long way. Most of these meals can be prepared in less than 30 minutes and some can even be fully cooked within that time.     Wow the Sloppy Joes really are easy to make! Gonna try the chicken curry too.. been wanting to make my own Indian dinner since we can never actually get out to one of our favorite restaurants.
