I am taking a break from menu planning this week, why you might ask? Because, we are heading to Florida to celebrate the boys birthday. We are going to enjoy the beach, surfing, the boat and pool fun with family and friends. We are very fortunate to have lived in South Florida for 9 years and still have family and lots of friends in the area, so it’s a bit of a homecoming.
Since we will be hanging in the sand for most of the week we will be winging dinners, hopefully having lots of fresh fish! I didn’t want to leave my community hanging without a menu plan so I wanted to share some of my favorite places that I personally go for inspiration weekly. Lots of great ideas that will keep our weekly menus fresh and healthy too.

Monday: Check out the Meatless Monday Website. We practice Meatless Mondays (may not always be on Monday but at least we go meatless once a week). They have a ton of fantastic recipes that are family friendly.
Tuesday: Check out Julie from Julieverse. Not sure how she does it but Julie does MONTHLY MEAL PLANS and comes up with some great recipes that any family will love. On our next “Taco Tuesday” I will need to try something from her May Menu Plan – Fish Tacos with Pico De Gallo and Coconut Slaw
Wednesday: Check out Hillary from My Scraps. Hillary has boys just as I do and is always heading out to a game or practice during the week, but she comes through weekly with healthy meals for her family.
Thursday: Check out Emily from Random Recycling. Emily is the person that turned me on to C.O.R.N night – “Clean Our Refrigerator Night” which is VERY smart because you hardly ever waste food and save money by not buying a meal for one night of the week. I also want to make her “Beach Bash Dinner” while we are on vacation.
Friday: Check out Kelly from Centsible Life. Kelly does a 365 Menu Plan and always share money saving and organizing tips to help families stay on track with keeping it healthy.
Saturday: Check out Lauryn from The Vintage Mom. Always real food and incorporates a lot of CSA and farm fresh favorites in her meals.
