REAL FOOD Menu Plan 11.7.16

I think I need another day, wouldn’t it be nice if we have 3 day weekends? I know many of us feel this way on Monday morning when the alarm goes off. This week, for me I just need one more day to finally get everything back in order from the construction and organize my week. I spent time yesterday going through our deep freezer to see what sort of meals we had in there. I was able to find five frozen meals that I could use for dinners this week. Not only did this save me lots of money at the grocery store but it’s going to save a ton of time in the kitchen this week.

Do yourself a favor, make double batches of meals and freeze the extras. You will thank yourself later on when you are scrambling for a meal then realize it’s right there, all you need to do is defrost.

REAL FOOD Menu Plan 11.7.16

Monday: Using the leftover beef roast from Sunday dinner to make a beef stew. I can easily throw it together and we can have it before my son’s baseball game. Yes, we are still in baseball. Brrr!

Tuesday: We are headed to the Flyers/Wings hockey game so dinner will be out.

Wednesday: BBQ chicken sandwiches  with cole slaw and baked beans. The chicken was frozen so all I need to do is defrost and place in the slow cooker on warm. Add a bit of bbq sauce if it seems too dry.

Thursday: Philly Cheesesteaks and Fries. I originally made these in the slow cooker and then froze the extras.

Friday: I made a ton of homemade sauce with all my garden tomatoes and froze it into meal portions. I can easily take it out of the freezer and add meatballs and sausage to make a meal, serving it with our favorite pasta and salad.

Saturday: Mushroom and Spinach Chicken thighs with seasonal risotto

Sunday: Buffalo Chicken Chili with vegetable quesadillas

So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family.     I love that so many of your meals are things you have ready to go from the freezer! I really need to do more of that so I don’t lose my sanity.
