One of the main reasons I keep O’Boy! Organic going is to encourage families to eat healthier. Doing simple things like menu planning weekly can keep you on track and help you maintain a healthier lifestyle. It’s super easy to do, takes no time at all and then saves you time and money each week. All my menu plans are family friendly and can be prepared within 30 minutes which helps all those busy parents out there. I hope you enjoy this weeks menu and it inspires you to think outside the box and serve healthier meals for your family.

REAL FOOD Menu Plan 11.14.16

Monday: My husband and I have a meeting in the evening so we want to give the kids something easy. I have some Applegate Farms chicken tenders in the freezer that the kids love and serve them with raw veggies and mac and cheese. Not the healthiest dinner on the planet but in a pinch it will do. TIP – If you buy a pre-packaged meal make sure it’s organic and has few ingredients listed on the package.

Tuesday: We will have a late dinner since my son will be at practice until 7pm. This gives me time to whip up a baked pasta. Serving it with salad and crusty bread. BTW….this is a great way to use up veggies and also hide a few in the pasta so the kids will eat it.

Wednesday: Orange Ginger Glazed Salmon served with mashed potatoes and broccoli. I’ve been making this recipe for years and still don’t have a photo of it. Hoping to give you the recipe soon.

Thursday: LEFTOVER NIGHT – If you haven’t tried doing this, please start. It saves you money weekly and time. Plus, you don’t have to cook one night out of the week.

Friday: I’m heading out to meet a girlfriend for dinner so the boys are on their own.

Saturday: Weekends have been filled with home projects and lots of painting since our construction which doesn’t give me a lot of time to prep dinners. I want something easy that can simmer throughout the day. The Crock Pot is my new BFF. This Chicken Tortilla Soup is simple to throw together and I can make a huge pot and freeze extras for another meal.

Sunday: We are heading to Whole Foods Market in the morning to pick up items for our Thanksgiving dinner. We will grab something there for dinner.

So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family.       That is one of my son’s favorite soups, he even loves taking leftovers to school.
