What an amazing Presidents Day weekend! The weather seemed more like spring than the middle of winter. We spent lots of time outdoors and even threw a small get together with a few friends Sunday night. It was great to entertain again and the kids loved having so many friends run through the house.

Our beautiful weekend weather meant that our menu plan changed a bit. No one wants meatloaf on a 70 degree sunny day, so that meal got pushed to this week. I feel the key to menu planning is to choose meals that can easily be saved in the fridge or frozen for another time, just in case your schedule changes. Here is our menu plan for this week, hoping we can stay on track a little better than last week.

Monday: Tonight is our LEFTOVER Night. We had a party on Sunday and have a ton of leftovers that I want out of my fridge.

Tuesday: I need a easy dinner to prepare since we will not get home from our day until 7pm. I have Bean Soup in the freezer that I will take out and have my husband heat up when he gets home. We will serve it with bread and salad.

Wednesday: We put half of the pulled pork that we made over the weekend in the freezer. Using a portion of that to make Enchiladas using the easiest homemade enchilada sauce on the planet. If you know you will have a busy night throw this meal together in the morning or even the night before and stick it in the fridge until you are ready to bake it.

Thursday: Our meatloaf dinner is back on the menu! This is always a great weeknight meal and easy to throw together even on the busiest of nights.

Friday: My goal is to cook dinner, something simple like grilled cheese and soup but I’m going to be honest. I’m tired by Friday and more than likely we will order.

Saturday: Keeping it easy and fun for our Saturday night. Chicken Fajitas is a fun way to get kids involved in the cooking process by having them cut up veggies that hopefully they then put on their fajitas.

Sunday: Switching things up and doing our meatless meal on Sunday. It’s been awhile since I’ve made Stuffed Manicotti so it’s on the menu with salad and bread. I love making big batches and freezing half for another meal.

So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family.
