This is one crazy week! I have seriously over booked myself on multiple days and I am leaving on Thursday for Shiftcon Health and Wellness Conference. That means I need to prepare meals for a few days this week, plus make sure my hubby has plenty of easy meals for him to make while I am away. I have plenty of frozen meals that I’ve previously made, which helps a lot…if only he remembers to take them out of the freezer. I also like to head over to Whole Foods and get their homemade pizzas which can be bought uncooked and placed in the freezer until we want them. It’s actually cheaper than take out and much healthier too (as far as pizza goes).
Since I already know it’s going to be a crazy week, I am planning on meals that I can easily prepare in the morning or have simple one pot meals that can be made without 30 minutes. How do you manage those crazy weeks and make family dinners nightly?

Monday: For Meatless Monday we are going with this yummy Roasted Asparagus and Mushroom Pasta with a Lemon Cream Sauce. I have a ton of lemons, plus mushrooms and asparagus about to go bad so why not use it up.
Wednesday: Sloppy Joes with homemade fries – I never got around to making those Sloppy Joes last week. I did brown the meat so it wouldn’t go bad then freezing it. This will make preparing the Sloppy Joes easier and less time too.
Friday: My MIL is coming into town so I am sure they will go out for dinner as a treat.
Saturday: Lots of soccer and baseball games happening so those Whole Foods Pizzas will come in handy
Sunday: I purchased Applegate Farms Hot Dogs which they can grill served with salad and homemade Mac and Cheese which is in the freezer.
