It’s the first day of school! YAY!!! The kids are back to school and I am thrilled to get back into a routine. I think we will have a bit of an adjustment period since I will be working part time outside of the home, but I am determined to make sure that a healthy dinner is on the table nightly. This week I want to focus on make ahead meals and also using the veggies from the garden. We have a ton of tomatoes and eggplant so I’ve found some new recipes that I hope my family loves…wish me luck!
REAL FOOD Menu Plan 8.31.15
Monday: Lemon Shrimp with Orzo. I will roast tomatoes and green beans from the garden to throw in the dish.
Tuesday: We have swim lessons so I want to put something in the slow cooker. Beef Roast with mushrooms served with roasted baby potatoes and green beans.
Wednesday: Many friends have tried similar recipes to this Stuffed Cabbage Casserole cooked in the slow cooker and loved it, so I am giving it a try.
Thursday: Now this isn’t exactly healthy but when I saw this recipe I knew I had to try it – Eggplant Gratin with Herbs. Serving it with Grilled Chicken.
Friday: Mama is going to be tired so it’s Leftover Night!
We are heading to the shore for Labor Day weekend so we will be enjoying lots of sun and good BBQ favorites.

So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family. Just remember when you are feeling a bit overwhelmed with “life” a little organization goes a long way.
