REAL FOOD Menu Plan 8.3.15

Our summer vacations are over, boo hoo! Actually truth be told I am happy to be home. I love our summer travels but it’s nice to get home and back on a schedule. Before we left I pretty much cleaned out the fridge so grocery shopping is on my list of things to do today. My garden is going crazy so we will have lots of fresh veggies for dinners and looking forward to getting back into healthy eating since our diet was not so healthy during our vacation. How do you get back into the swing of menu planning after being away for so long?

REAL FOOD Menu Plan 8.3.15

Monday: We had a long day of travel so take out was on the menu (I know, not so healthy but it was easy)

Tuesday: The boys are starting swim lessons tonight for the next 6 weeks so I am keeping it easy with some Trader Joes meals that I had in the freezer

Wednesday: Grilled chicken and summer squash and tomatoes from the garden with orzo.

Thursday: The boys are having a little sleepover with my SIL so we are having a date night!

Friday: Hungry for Salmon! Keeping it simple with just some fresh lemon and dill, serving it over a salad. The kids will eat salmon with fresh veggies and maybe garlic lemon pasta.

Saturday: I will be spending the day in the gardening…weeding! UGH so I want to keep it easy. Making Shredded Chicken Tacos in the slow cooker so we can easily eat when hungry. In the morning I will chop up veggies and have cheese ready so the kids can even make their own when ready.

Sunday: Grilling a whole chicken and serving it up with garden veggies and garlic mushroom quinoa 

So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family. Just remember when you are feeling a bit overwhelmed with “life” a little organization goes a long way. Most of these meals can be prepared in less than 30 minutes and some can even be fully cooked within that time.     When I get back from vacation I crave home-cooked food but I’m also exhausted. It takes me a little while to get back in the swing of things. Your orzo dish reminds me of one I love making that I’m putting on my menu for next week, thanks!
