REAL FOOD Menu Plan 8.23.13

It’s going to be a busy week with back to school night, sports, social event and then heading to Atlanta for the Type A Parent Conference on Thursday. Now, I know women that leave for a business trip and make meals for their family while they are gone. I’ve done this and guess what? Those same meals are still in the freezer when I return. I know my husband will order pizza one night, grilled cheese with soup another night and hot dogs with fries will be on the menu too. My husband will be the first one to tell you he doesn’t multi-task well and just can’t get it together when I am gone. So I don’t waste my time on pre-made meals, instead I take a trip to Trader Joes and Whole Foods and get the best organic preservative free foods for my “boys” to enjoy while I am gone.

For the three days I will be in town I plan on making meals that will lend themselves to leftovers so they will have some healthy choices to choose from while I am gone.

Monday: Eggplant Parmesan using freshly picked eggplant from my garden and homemade sauce using roasted tomatoes from the garden.

Tuesday: Roasted Chicken with Quinoa and Roasted Parmesan Yellow Squash from the garden

Wednesday: One of our favorite fish dishes Potato Horseradish Crusted Mahi Mahi with roasted green beans. 

Thursday through Sunday: The boys are on their own – I hope they have a C.O.R.N night so I don’t come home to rotten food in the fridge and made somewhat sensible choices. I’ll keep you posted!
