We are just getting back from a wonderful weekend at the beach. We actually stayed an extra night because the weather was just too good and we couldn’t leave. The boys had a ton of fun getting used to a new surf board and soaked up every minute of the sun. Now back home and thinking about the week ahead of us. The boys are doing 2 different camps both in the city so I have some driving and juggling ahead of me this week, which makes me want to have easy dinners that I can either make ahead or get on the table quickly.
REAL FOOD Menu Plan 7.6.15
Monday: Trying something new this week. I can make it ahead and pop this Spinach and Artichoke Pasta Casserole in the oven after picking the kids up from camp.
Tuesday: It’s been awhile since we’ve done Taco Tuesday, so we will create a Taco Buffet for everyone to make their own tacos including at least a few vegetables.
Wednesday: Grilled Fish and vegetables and some sort of grain. Doesn’t this Garlic Mushroom Quinoa look amazing?
Thursday: I will be busy preparing and attending a Healthy Girls Night Out so the boys will on their own with Leftovers.
Friday: Keeping it easy with homemade Pizzas – this is also another great dinner that the kids can help with. Give them some dough and make a buffet of toppings and let them create their own pizza masterpieces.
Saturday: Our plans are up in the air so I am keeping our options open. I know one thing….I will not be cooking!
Sunday: As you can see I spent a little on Pinterest this week. I love this Italian Sausage Bake which looks super easy to make and something my crew will hopefully love.
So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family. Just remember when you are feeling a bit overwhelmed with “life” a little organization goes a long way.
