Did I say summer would be more relaxing? Well, we are as crazy as ever with summer sports and lots of travel. I guess that is why I missed a week of menu planning because the boys and I headed down to the shore so we could escape the heat. We are now back to reality for a few days before heading off again for another vacation.
Our heatwave is still going strong hitting 98 degrees today and with the heat index it will feel like 105 degrees. We are hoping to get a cool down, until then we will be keeping our dinner simple and making some no-cook meals. How do you deal with the summer heatwaves and meal time? Because, we all need to still eat…even when it’s 100 degrees outside.
REAL FOOD Menu Plan 7.25.16
Monday: We had tons of food leftover from the shore so we brought that home and will enjoy shredded bbq chicken sandwiches and salad tonight for dinner. I made this zucchini relish that is to die for that we love to top these sandwiches with. Relish isn’t just for hot dogs anymore!
Tuesday: Mushroom and Artichoke Ravioli with grilled sausage and kale from the garden.
Wednesday: Pasta Salad with grilled chicken
Thursday: Headed to a friend’s house for a BBQ and swimming.
Friday: I am heading to Maine for a friend’s wedding so my husband and the boys are on their own. I am sure they will have leftovers and take out.
Saturday: In Maine…boys on their own.
Sunday: Heading home and getting in late that afternoon. My husband flies out that same evening for a business trip so I think I will take the boys out to dinner and hopefully get something healthy into their bodies.
So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family.
