It’s near the end of spring sports and I am more than ready for it to be done and I think the boys are ready too. Late games and practices are taking a toll on our weeknight schedule, especially our dinners. Since we’ve had so much rain the teams are trying to hard to have the kids play as many make up games as possible which means even less time at home. My menu plan this week is super simple, because frankly I don’t have it in me to cook a meal that my kids are too tired to eat at 8pm at night. The struggle is real people…we all have those weeks, and this week it’s my turn. So if you are swamped, don’t have time to cook a thing then this menu plan is for you! REAL FOOD Menu Plan 5.15.16
Monday: It’s baseball game night so I will be serving up breakfast for dinner before we need to be at the field. It’s a easy meal to pull off and the kids always love it.
Tuesday: Lacrosse practice which now will last until almost dark. I try very hard to get the kids to at least eat dinner before practice starts, otherwise it’s 9pm before we eat. Quesadillas are always a favorite, and a great way to use up leftover veggies. If you want to mix it up a bit try making breakfast quesadillas.
Wednesday: Another baseball game on the calendar, plus we have running club which makes for a super busy evening. I will be running to our local deli and grabbing sandwiches for us to eat at the field.
Thursday: Finally, nothing on the calendar so we can have a proper family dinner. Making a family favorite – Lemon Garlic Chicken served with rice and salad.
Friday: We are headed to a Bluegrass Festival/Camping weekend and I have my go-to camping recipes that always work well, so why mess with a good thing?
Saturday: Camping Weekend!
Sunday: We will be heading home from our camping weekend so whatever is in the cooler is what we will eat for dinner. Pretty gourmet I know!
