Good Morning! Hope everyone had a fabulous week and ready to begin a brand new one. I am so thankful that our weather here in the Philadelphia area has improved. This weekend it was gorgeous, so much so that I had no problem spending 8 hours on fields watching my boys play baseball and lacrosse.
This week the weather is continuing on a warmer path and no rain in site for the next few days. That means our sports schedule will stay the same and our nights will be as busier than ever, but we still need to eat! Right? If you are new to O’Boy! REAL FOOD Menu Plan 4.18.16
Monday: We have 2 games which makes for a long evening and no time for dinner. So it’s going to be our leftover night. The boys can pick something out of the fridge or prepare themselves a sandwich before the games.
Tuesday: Using the leftover brisket from last week for “Taco Tuesday”
Wednesday: Sausage, Onions and Peppers in the slow cooker is one of the boys favorite meals and great for those nights when we have practice or a game.
Thursday: Grilled pork loin with asparagus and rice
Friday: We have a baseball game in the evening so I’m keeping it simple and making everyone sandwiches and fresh fruit to take to the field.
Saturday: We have nothing on the schedule, no games or practices! WHOO HOO! I plan on spending as much time as possible outside so grilling out seems very appropriate. It’s going to be a hamburger and hot dog kind of night!
Sunday: We have games in the early afternoon so we will have plenty of time to come home and prepare dinner. Grilled Chicken with some sort of grilled vegetable as a side. When I grill out I want everything on the grill so I don’t dirty my kitchen. Is that weird?
So that’s my menu plan for this week…hope it’s inspired you to think outside the box when feeding your family. Just remember when you are feeling a bit overwhelmed with “life” a little organization goes a long way.
