We’ve had a busy few days with family in town and now the stomach bug is going through out house, which is making for extremely fun times – NOT! We hope this little virus is short lived so we can get back into a routine.
Last week since we were entertaining family we spend a lot of time eating out which means our diet wasn’t the best. I want make sure we are all eating super healthy this week, breakfast and lunch included. I plan on making some big batches of pancakes and oatmeal for breakfast this week and stock up on some homemade snacks for after school. How do you make sure your family eats healthy throughout the day?
REAL FOOD Menu Plan
Monday: For our Meatless Monday I am keeping it simple because I have a sick one in the house. We will have Carrot Ginger Soup which is in the freezer and salad.
Tuesday: I found this Sausage and Kale Soup on the Vintage Mom’s Menu Plan which will be great for dinner and leftovers will be nice for lunch throughout the week.
Wednesday: Herbed Chicken with Quinoa and Roasted Asparagus
Thursday: Leftover Night – my favorite night of the week!
Friday: Tequila Lima Shrimp Tacos
Saturday: Salmon and Kale Cakes with fries for the kids and greens w/ lemon garlic vinaigrette
for my husband and I.
Sunday: I hope to get some gardening done on Sunday plus we have a Lacrosse game out of town so a crock pot meal will be easy to prepare and ready for when we get home. I have a recipe for Turkey Meatloaf but plan on just cooking it in the crock pot, I can easily prepare it the night before.
