Christmas is less than 2 weeks away and life is getting busier by the minute. We are traveling yet again for a family “early” Christmas so this week’s menu plan is a bit of a mess. I have some other suggestions for you because I know we are all in the same boat, rushing around buying gifts, parties and school activities. All the meals I provide are made with real foods and easy to prepare which makes my life easier and I hope yours too.
REAL FOOD Menu Plan 12.15.14
Monday: We try to make at least one day of the week a meatless meal. This Pasta with Roasted Garlic and Broccoli is super easy and takes no time at all to prepare.
Tuesday: Breakfast for Dinner is always a hit and easy to prepare. I like doing breakfast for dinner because it gives me a chance to stock up on breakfast foods for the rest of the week. I never have time during the week to make pancakes, waffles or french toast so I have to either serve it for dinner or make it on the weekend.
Wednesday: I have a ton of venison in the freezer so I am going to make meatloaf with the venison serving it with mashed potatoes and peas – talk about comfort food!
Thursday: Gotta love LEFTOVER NIGHT! Saves you money weekly and lots of time. If my boys don’t like anything in the fridge then they can make themselves a PBJ.
Friday: I love this recipe from Jolynne Shane – Sausage Potato Hash which I can also make with venison, I will need to doctor it up a bit.
Saturday: I feel our dinners are getting a bit heavy with pasta and red meat 2 times this week. Changing it up a bit with this Spanish Rice with Shrimp dish from Rachel Ray.
Sunday: Sunday seems like the one day we are home so I can easily spend a little more in the kitchen. Roasted Chicken with roasted potatoes and Asparagus can easily be prepare the night before if you are busy during the day. Roasting those little fingerling potatoes and asparagus take no time at all so your prep time is almost nothing.
