I have to say it’s going to be a pretty uneventful week. sports, school events and cooking classes take up most of our evenings. Seems like a lot, but I am home everyday, no traveling which makes me VERY HAPPY. This week I am focusing on cleaning out my freezer. Our deep freezer and upstairs freezer are completely full which can only mean there are a lot of meals in there for us to eat. By doing a clean out once every other month you save money on grocery shopping and save time preparing meals – it’s a win for everyone!
REAL FOOD Menu Plan 10.13.14
Monday: The kids have off from school and the weather seems promising so I plan to put a roast in the crock pot and enjoy the day with the boys. I know it’s #MeatlessMonday but I had to cook this roast so we are going Meatless on Wednesday night.
Tuesday: Using the leftover roast to make Beef Stroganoff
Wednesday: Soups On! Roasted Carrot Ginger Soup (from my freezer) served with salad and crusty bread
Thursday: LEFTOVER NIGHT – my favorite night of the week
Friday: We have bingo at school that evening so it’s Pizza Night! I have pizza dough in the freezer and homemade pasta sauce.
Saturday: This is going to be our busiest day of the week. I have Eggplant Parmesan in the freezer which I will re-heat in the oven and serve with pasta and salad
Sunday: Chicken Enchiladas using a homemade gluten free enchilada sauce
