REAL FOOD Menu Plan 1.25.15

SNOW IS COMING! SNOW IS COMING! The forecast for is calling for 8-12 inches of snow starting today and not ending until TUESDAY! I love a good snow storm but couldn’t of this started on Friday night? I can’t even imagine what the grocery store is going to be like so I am staying clear and ordering online. I know…I am being lazy but I can’t deal with the crowds today.

So last week we did pretty well with our Menu Plan. We had one night that didn’t work out so we are having Chicken Thighs and Sausage Cacciatore early this week before the vegetables go bad. For this week’s menu plan I have comfort food on my mind, because if we are going to be snowed in for a day or so I want to be snowed in with good food, hot chocolate and lets not forget the wine.

MENU PLANNING TIP: Make sure you take a peek in your freezer to see what meals you have on hand that is already made. This week I am using Potato Leek Soup and Chili from the freezer. Makes my life so much easier when all I have to do is reheat and serve. Plus, you are saving money on groceries and most importantly saving TIME!

Monday: I am assuming the whole family will be home because of the snow so our Meatless Monday meal will need to move to another night. I plan on making that Chicken Thighs and Sausage Cacciatore. It does take a bit of time for this dish, normally I wouldn’t make something like this during the week but since we will be in weekend mode and I don’t want my vegetables to go bad I am making it tonight.

Tuesday: Mexican Night - One pan Mexican Quinoa which my husband and I can eat on it’s own but I think I will make the boys into burritos with some cheese.

Wednesday: It’s Breakfast for Dinner! We were at Reading Terminal over the weekend and purchased many things and one of the items were organic apple sage breakfast sausage.  I plan on making some pancakes for the boys and bakes eggs for my husband and I.

Thursday: I am hosting a Essential Oils 101 party at my house on Thursday so it’s Leftover Night for the boys.

Friday: I will be busy preparing for a Kids Cooking Party so I want dinner to be easy. So BLT’s and Potato Leek Soup is on the menu. I made Potato Leek Soup a few weeks back and had enough leftover so I froze it for another meal.

Saturday: I will be busy for most of the day doing a cooking party for a little boy and then my boys have friends birthday party later in the day. I will not have a ton of time to fix anything so I dug into my deep freezer to see what I had on hand. I found Chili which I will just defrost and throw into the slow cooker. We might even make Chili Hot Dogs using Applegate hot dogs.

Sunday: It’s Superbowl Sunday! I plan on making a few appetizers including one of our favorites Kale and Artichoke Dip and Nachos
