REAL FOOD Menu Plan 1.19.14

Well we got off to a good start last week with our Meatless Monday meal and incorporating a “Salad Night” into our weekly plan. We did have a few hiccups throughout the week that didn’t allow us to make every meal that I planned so that means I will make those meals this week.

Do you ever have a week when your meal plan doesn’t work out? Early on in the week when I realized I would have nights that my menu plan wouldn’t work out so I made sure that I made the meals using the fresh veggies that would go bad quicker, and save the others for this week. What do you do when your menu plans don’t work out the way you plan?

REAL FOOD Menu Plan

Monday: Our #MeatlessMonday meal will be a Spinach Quinoa Salad with Carrot Ginger Soup which I have in the freezer.

Tuesday: Shrimp Pasta with Roasted Garlic and Broccoli served with homemade rolls (recipe coming soon)

Wednesday: I will at an event all day so I am going to make Chicken Tortilla Soup (which I was suppose to make last week) I make it in the crock pot which saves me a lot of time.

Thursday: Serving up Turkey Meatloaf with cauliflower mashed potatoes and some sort of veggie.

Friday: After a long week I really hate to cook so I am making this Friday our “Leftover Night”

Saturday: I went to the Philadelphia Home Show with a friend so the boys in my life got take out so those ribs are making it out of the freezer this weekend. Here is the rib recipe that I’ve had my eye on for awhile. Looking for a good Asian Slaw recipe – got one?

Sunday: Our Sunday was jammed and I didn’t get my act together in time to put together this amazing sounding Quinoa Chicken Chili that I saw over at  The Vintage Mom - what type of Chili do you like to make?

Enjoy your week – keep it REAL and HEALTHY!
