Well Summer is officially over. The vacations are finished, sports have started and school is starting this week. I guess that means I need to start staying home and feeding my family regular family meals. I have to say, I am looking forward to getting back into the swing of things, back to a routine. Are you feeling the same way?
I have a ton of produce from the garden so my meals this week will be based on zucchini, eggplant, kale, peppers and tomatoes. What are some of the seasonal vegetables you are using in your family meals?

Monday: I have a few eggplant that need to be cooked. I wanted to do something a bit different so I am making Eggplant Rollatini
Tuesday: My son has been begging for Beans with Sausage and Kale so I am going to surprise him and make that for dinner.
Wednesday: I can’t leave my little guy out in the cold without his favorite meal. So I plan on making Baked Macaroni and Cheese with Cauliflower with raw veggies from the garden.
Thursday: My favorite night – LEFTOVER NIGHT!
Friday: Keeping it easy with Buffalo Burgers and Homemade Fries
Saturday: My husband has been craving Stuffed Zucchini and have a great Stuffed Zucchini Boat recipe
Sunday: Found this new recipe on Pinterest - Chicken Merlot with Mushrooms. Hoping the family likes it.
