Quick and Healthy Breakfast Ideas for Busy Mornings

We are always looking for ways to make our life easier, especially on those busy weekday mornings when everyone gets up late and you are scrambling around to get everyone ready for school and breakfast in their tummy’s. Just as I plan for weekday dinners, I plan for the morning. With a little organization a healthy breakfast  can be served daily without much work in the morning. Here are some quick and healthy breakfast ideas for those busy mornings.

SLOW COOKER OATMEAL – You can prepare this the night before and let it cook as you sleep. When you wake breakfast is ready and waiting. My fall favorite is Apple and Pumpkin Slow Cooker Oatmeal but you can add almost any fruit mixture in the oatmeal base that you like.

HARD BOILED EGGS – These easy to peel hard boiled eggs are great for on the go. We make big batches and leave them in the fridge to eat just with a little salt and pepper or make into egg salad. I also love to spread hard boiled eggs on a piece of toast with avocado.

MAKE AHEAD BUTTERNUT SQUASH FRENCH TOAST: Never used butternut squash before in french toast or pancakes? You must try it. After you puree the butternut squash you can add a cup to the french toast mixture. Freeze the rest in 1 cup servings for another time. Make sure to make a double batch so you can freeze extras. In the mornings you can easily re-heat in the oven.

HOMEMADE PANCAKE & WAFFLE MIX: No need to purchase a mix when you can make your own pancake and waffle mix. Keep it fresh in a sealed container and use when ready. Just as you made big batches of french toast you can do the same with pancakes and waffles. Freeze those extras for busy mornings.

BREAKFAST QUESADILLAS: The kids can even help make these breakfast quesadillas. You might think these will be time consuming but wait…make them on the weekend and freeze individually and then re-heat in the morning.

No Bake Peanut Butter and Chocolate Granola Bars

PEANUT BUTTER GRANOLA BARS: Why buy when you can easily make your own. These peanut butter granola bars take no time to make and you can freeze them until you are ready to eat. Perfect for on the go and you can bring along fresh fruit and or a yogurt too.

Peanut Butter Vanilla Protein Smoothie

SMOOTHIES: This is a easy one. You can make a healthy smoothie within minutes using fruits, veggies and other healthy ingredients including chia seeds, flax seed and protein powder. It’s amazing how much you can pack into a smoothie, it can be a complete meal that you can take with you.

YOGURT: This is one of my favorite on the go breakfast ideas. Use your favorite yogurt or make your own yogurt. Top with granola, fresh fruit and superfoods such as chia seeds, hemp seeds and flax seed.

APPLESAUCE MUFFINS: You’re not making these applesauce muffins on those busy mornings but you can make then freeze. Take out the night before or defrost in the oven on a very low heat. Serve with fruit and yogurt or just on it’s own.

QUICHE CUPS: With help from the kids you can make these breakfast quiche cups within minutes. You can use up extra veggies from the fridge then freeze the extras. The kids can easily take these out in the morning and re-heat in the oven.

Can you tell from the list that I like to make a lot of meals ahead of time. It helps me stay organized and sane throughout the week when we are so busy we can’t see straight. Regardless of what you make you want the process of making the meal to be easy too.
