I love scones, because they aren’t as sweet as cookies and go perfectly with tea or coffee. Last weekend I went to an afternoon holiday party so I thought these Peppermint Chocolate Chip Scones would be perfect for the event.
Peppermint Chocolate Chip Scones
3 cups flour (2 1/2 for mixture and 1/2 cup for work area)
1 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
6 tablespoons unsalted butter cut up
3/4 cup milk
2 large eggs
2 drops peppermint oil
1/2 cup Trader Joes Peppermint bits
3/4 cup mini chocolate chips
Preheat oven to 375
In a large bowl whisk together flour, salt and baking powder. Add butter and work it through until the mixture is unevenly crumbly.
Then mix together the milk, eggs and peppermint oil into the dry ingredients. Then add chocolate chips.
Transfer the dough to a floured surface and gently pat into a rectangle. With a pizza cutter cut into triangles and then transfer to the baking sheet.
Bake at 375 for 12-15 minutes (depending on your oven)
Peppermint Chocolate Chip Topping
In a small saucepan melt one cup of white chocolate chips with about 3 tablespoons of half/half or whipping cream. Once the mixture is smooth leave the saucepan on the stove but turn the burner off. If the mixture begins to harden just put the burner on low to heat the chocolate sauce again.
With a spoon spread a small bit of the chocolate sauce over the scones then dip into a plate of Trader Joes Peppermint Chips. Place on a wire rack until the harden, you can also place into the fridge too.
