Tis’ the season for parties, parties and more parties! One of the parties I love the most are the Cookie Exchanges. I end up with many different kinds of baked goods just in time for holiday entertaining. This is what I will be taking with me for the Cookie Exchange. Not sure if you would call this a cookie but doesn’t it look yummy? I just couldn’t resist.
Oat and Toffee Grahams
12 Whole graham crackers
1 1/2 cups of rolled oats
3/4 cup of sugar
3/4 cup of brown sugar
3 Tbsp. of flour
2/3 cup of melted butter
1 tsp. vanilla
1-12 oz Pack of Semi Sweet Chocolate Chips
1- egg beaten
1/2 cup coarsely chopped almonds
Preheat Oven to 350. Line a 15x10x1 inch baking pan with foil, extending foil beyond edges of the pan.
Arrange whole graham crackers in a single layer in a prepared pan.
In a large bowl combine oats, sugars, and flour.
Add melted butter, egg and vanilla; stir until well combined. Spoon over graham crackers and spread evenly to edges of pan to cover graham crackers.
Bake 20 to 25 minutes or until oat mixture bubbles and is lightly browned on top.
Remove from oven and sprinkle with chocolate chips. Return to the oven 1 minute.
Spread melted chocolate over top to cover. Evenly sprinkle with almonds. Cool in pan on wire rack. Use foil to lift from pan. Remove foil. Cut or break into bars.
Makes 32 bars.
