30 Day Gluten Free Challenge Week 2 LogoI’ve completed my 2nd full week of the 30 day Gluten Free Challenge hosted by Mamavation and Now Foods. During my first week I focused more on sweets and breakfast foods. This week it was more about dinners expect for this weekend when I made the most delicious gluten free peanut butter cheesecake brownies. OMG – SO AMAZING and easy as pie.  While I naturally have been going more gluten free I haven’t used a lot of the gluten free flours and I’ve been pleasantly surprised of how easy the flours are to work with.

I needed a gluten free flour mix for crepes that I made and also breading for chicken. I was able to make as much as I needed and store the rest in a airtight container. Here is the recipe for the Gluten Free Flour Mix.

We love chicken, except for my picky 7 year old. He hates it so much that he swears he is allergic. This week I made breaded chicken using the gluten free flours. I used boneless skinless chicken thighs and seasoned the flour with thyme, garlic, parmesan and red pepper flakes.  The chicken had fantastic flavor and the breading was light and really stuck to the chicken. Here is the recipe for the Herb Chicken Thighs were were approved by my picky eater.

I also had a chance to use the Amaranth and Quinoa this week when I made a Bok Choy Shrimp Stir Fry.  It made the dish much light than using noodles and the added nutrients that both grains gave the dish was an extra bonus.

Next up were those gluten free peanut butter cheesecake brownies which were so amazing and EASY because I used the Now Foods gluten free brownie mix as the base. This is a perfect way to wow a crowd without spending all day in the kitchen making a dessert. I normally would make homemade brownies but knowing that Now Foods are organic & GMO FREE then I can feel good about cutting some corners and using a mix instead of making it homemade.

This next week I am going to try to make a gluten free bread, focus more on the grains and dinner recipes. I might even do a dessert or two. If you have any gluten free recipes you would like to share, please do. I’ve been adding them to my gluten free goodness Pinterest board for inspiration.
