One of the things we like to eat most on rainy chilly days is soup and sandwiches, it’s easy to prepare and there are so many different variations to choose from. I love to make homemade tomato soup, it’s easy and can be made within 30 minutes which is perfect for a weeknight meal.
Homemade Tomato Soup
1.5 lbs tomatoes
1 onion diced
1 medium potato
1 medium carrot
1 celery stick
1 tablespoon of olive oil
1 clove of garlic
1 cup vegetable or chicken stock
2 tablespoons of tomato paste
1/2 teaspoon basil cut up
1/2 cup of heavy cream
salt and pepper to taste
Cut tomatoes into quarters. Cut out the green cores and throw them away. Slice the onion then cut into small pieces. Peel the carrot and cut off the ends. Wash the celery and cut off the ends. Cut the carrots and celery in thin pieces.
Peel the potato and cut into chucks.
Put oil in the pot and add the veggies and salt and pepper to taste. Then put all the veggies and garlic in the heated saucepan and cook until tender. Add bouillon cube to 1 cup of water, dissolved add to veggie mixture. Add tomato paste and tomatoes then bring to a boil. Let the soup cook on low medium heat for at least 20 minutes, stirring often.
Once the soup is cooked, turn the heat off and add the heavy cream and stir. With an immersion blender, carefully blend until smooth. If you don’t like the skin then you can strain the soup in a food mill or strainer.
Make it a meal and serve it with a salad or sandwich. There are so many different types of open face sandwiches that you can make, some of my favorites are Tuna, Egg, Chicken, Apple and Cheese, Crab and Avocado or you can try these sandwiches I made for our family.
