Healthy Homemade Banana Ice Cream Sandwiches

I’m always looking for fun healthy treats for the kids, and since they don’t get them often when they do it’s extra special. Our house has been under construction for weeks and unfortunately homemade anything has been sparse. I wanted to surprise the boys with a semi-healthy treat when they got home from school. Even though it’s October the weather has been unseasonably warm so ice cream sandwiches came to mind.

Not wanting to make the trek to the grocery store while contractors were here, I decided to use what we had on hand to make these healthy homemade banana ice cream sandwiches. Thankfully I just received some of my favorite candies from UNREAL. They are made with non-GMO, fair trade and sustainably sourced ingredients which makes me feel better about adding them to baked goods and also just plain eating them. Trust me, it was hard for me to not to eat all the milk chocolates before putting them into the cookies.

Healthy Homemade Banana Ice Cream Sandwiches

These cookies are pretty darn easy to make, it took me a total of 10 minutes to make the mixture. The ice cream is made with just 3 ingredients, and it’s delicious on it’s own or with these cookies.

Healthy Homemade Banana Ice Cream Sandwiches

Ingredients
  • 2¼ cups flour - 1 cup white whole wheat, 1¼ cup regular whole wheat
  • ½ teaspoon baking soda
  • 1 cup organic shortening
  • 1 cup raw sugar
  • ½ cup organic brown sugar
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 bag of UNREAL Milk Chocolates (about 1 bag)
  • BANANA ICE CREAM
  • 3 frozen bananas
  • 2 cups plain greek yogurt
  • 2 teaspoons vanilla
Instructions
  1. In a medium bowl mix together all dry ingredients
  2. In a large bowl mix together wet ingredients then add dry ingredients and incorporate well.
  3. With a spoon mix in all the milk chocolates
  4. Using a teaspoon scoop up cookie mixture and place it on a baking sheet.
  5. Bake at 350 for 15-20 minutes depending on your oven
  6. BANANA ICE CREAM
  7. Place all ingredients in a high powered blender
  8. Blend together until everything is incorporated and smooth
  9. Place in a container and freeze for 2 hours
  10. When completely frozen add 2 teaspoons to the center of one cookie then place another cookie on top. Freeze again for 15 minutes then eat.

The ice cream is extremely easy, no ice cream machine required and you only need 3 ingredients. We had extra ice cream left over and I broke up some UNREAL Peanut Butter Cups and threw those in. This time, I saved it all for myself. Shhh…..don’t tell the kids!
