One of my favorite fall recipes is Roasted Carrot Ginger Soup. You might say that you don’t like cooked carrots or carrots in general. Let me tell you something…my husband HATES carrots and loves this soup. By roasting the vegetables it brings out all their natural sugars and leads to intense flavors. I swear to you, this is a hit for kids and adults. I love making a huge batch and freeze the extras for future dinners. It’s perfect for those busy nights when you have nothing planned. Serve with some crusty bread and salad or grilled cheese.
