Fizzy Bunny Easter Mimosa

I love brunch anytime of the year but a Spring brunch is my favorite. There is nothing better than gathering your friends and family together to celebrate the season of warmer weather and the rebirth of nature. Brunch is the best of both worlds, you can create a menu of your favorite sweet and savory foods and then top it off with cocktails.

One of my favorite cocktails to serve is Mimosas. Traditionally they are made with orange juice, but now there are so many wonderful combinations to choose from. Some of my favorite juices to use are Pomegranate, Cranberry, Grapefruit, Peach, Pineapple and my new favorite – Carrot Juice. Don’t make a face, because I know you are. Trust me, it’s delicious!  Whenever I make a Mimosa I always add some sort sparking water, normally lemon, orange or whatever will compliment the drink. This Easter the signature drink will be a Fizzy Bunny Mimosa. You can make it a virgin for the little ones buy leaving out the champagne and adding more juice and sparking water. 1 Bottle Dry Champagne

1/2 cup 100% Carrot Juice

8oz orange sparking water

Juice of 4 mandarin oranges plus 5 wedges or you can add 2 drops of orange essential oil instead of the orange juice. If you have the essential oil it really gives the mimosa a perfect POP of flavor.

Finely shredded coconut for the rim of glasses


1. In a large measuring cup add carrot juice, sparking water and juice of 4 mandarin oranges

2. Take 4 champagne glasses and rub the rims with a wedge of orange then place upside down into the coconut

3. Fill each glass half full with champagne

4. Pour the juice mixture in each glass

5. Garish with orange wedges That’s it, pretty easy I’d say.

    I totally made a face when I read carrot juice but I actually might give it a try. We just had my sister’s shower with a bubbly bar and used OJ, peach and POM juices, plus your typical fruits like berries, mango and peach. It was yummy!

    Love love this idea! I’m a big mimosa fan – we always have a bottle prosecco in the fridge and am intrigued by the idea of using carrot juice (gorgeous photos.)
