Easy Weekday Meatloaf

 

Meatloaf is one of those foods that just screams comfort food. This recipe is so easy to make and we always have enough left over for meatloaf sandwiches the next day (my husband’s favorite). I like to serve it with baby peas because they are so sweet (and the kids will eat them), and some sort of mashed potatoes. Recently I’ve been adding either zucchini (because I had so many from the garden) or cauliflower in with the potatoes. It’s great way to sneak a few more vegetables into my family’s diet.

Easy Weeknight Turkey Meatloaf

 Ingredients

2 lbs organic ground turkey (you can substitute 1 lb of ground turkey for 1 lb of Italian turkey sausage (remove casings)
1 pack of Simply Organic  dried onions 
8 oz tomato sauce
1 egg – beaten
2 Tablespoons worcestershire sauce
3 cloves garlic – finely minced
1 small onion finely chopped

Glaze

3/4 organic ketchup
2 TB brown sugar

Directions

In a large bowl mix all the meatloaf ingredients together then place in a loaf pan and bake at 350 for 45 minutes. Take out of the oven, add the glaze on top and place back in the oven for another 15 minutes.
