This is a family favorite and it’s so easy to make. It takes about 10 minutes to put everything in the crock pot and let it cook on low all day. Chicken Tortilla Soup is perfect for a crowd or any sort of weeknight meal. I like to make this on those busy days when I will not be home to prepare dinner. Crock Pot Chicken Tortilla Soup
1lb of boneless organic chicken breast
1 bag of frozen organic sweet corn
1 – 28oz can of diced tomatoes
1 – 15oz black beans
1 sweet onion (red or yellow) – diced
1 orange pepper – diced
4 cloves of garlic minced
6 cups of organic chicken broth
1 Tablespoon Chili Pepper
1 Tablespoon Cumin
Salt/Pepper to taste
Sour Cream or Greek Yogurt – we used Stonyfield
Shredded Cheese – we like to use Sharp or Monterrey Jack
Tortilla Chips – we used Late July Multigrain Lime
* Place all ingredients in the crock pot and mix so the seasonings is mixed through.
* Set the crock pot on low for 8 hours or high for 4 hrs.
* Once the chicken is cooked through, take out and shred and place back into the crock pot.
* Serve in bowls and top with your favorite toppings
