Butternut Squash and Sausage Pasta

One of my favorite things to cook during the cool fall and winter months is butternut squash. I mainly use butternut squash for soups and breakfast items but I wanted to try something new. I mostly roast and then puree but this time I wanted to cube the squash and add it to pasta. I saw this Giada De Laurentiis butternut squash pasta recipe and wanted to give it a try. As always, I ended up putting my own spin on the recipe by a few of my own ingredients.

Butternut Squash and Sausage Pasta

I made it just recently when my mother in law came for a visit. I served this with lots of crusty bread and a good bottle of red wine. It was a hit, even with my boys. It was easy to pull together,  and perfect for fall entertaining. You can even serve the butternut squash and sausage pasta with this Kale and Brussels Sprout salad.

  • 1 box of pasta, best to use Penne, shell or bow tie
  • 1 butternut squash peeled and cubed
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 3 cups finely cut kale
  • 1 lb spicy Italian Sausage (we used turkey)
  • 4 oz goat cheese
  • 1 cup ricotta cheese
  • 1 cup reserved pasta water
  • 1 cup Parmesan cheese
  • 1 teaspoon red pepper flakes
  • 1 tablespoon fresh minced rosemary
  • 1 tablespoon fresh minced thyme
  • 1 cup fresh basil cut
  • salt/pepper to taste
  • 3 tablespoons olive oil
  1. Pre-Heat oven to 400 degrees
  2. On a baking sheet add cubed butternut squash, 2 tablespoons olive oil, salt, pepper, thyme, rosemary and red pepper flakes. Mix together and bake for about 30 minutes
  3. Take baking pan out of the oven and add the diced onion and sausage to the butternut squash mixture. put back into the oven and let cook another 20 minutes. When sausage is almost done add the garlic and mix together. Place back in the oven for another 5-10 minutes
  4. Once sausage is done, take out of the oven and slice into ½ inch pieces. Mix with butternut squash onion mixture and put back in the oven for 10 minutes to get the sausage browned.
  5. In a small pot add goat cheese, ricotta cheese and ½ cup Parmesan cheese. Place on low heat.
  6. Bring a large stock pot of water to a boil, add 1 tablespoon olive oil and salt. Once boiling add the pasta and cook as directed.
  7. The last 5 minutes of the pasta cooking take out 1 cup of the water and add it to the cheese mixture, stir until it's a creamy sauce
  8. Add kale to the pasta water and cook until pasta is done.
  9. Drain pasta and kale, add back to the stock pot
  10. Add sausage and butternut squash mixture and then cheese mixture
  11. Combine all ingredients then add ½ cup basil
  12. Place on a large platter or bowl, add remaining basil and Parmesan cheese then serve.

    I love goat cheese and butternut squash together. This looks delicious. I will definitely be trying a vegetarian version of this!

    I love everything about this plate! I wonder if I could do a dairy/gluten free version for the kids, would they eat it?

    So glad you posted this! I have roasted butternut squash in the fridge that needs to be used up. I think I may use potatoes in place of the pasta for dh and I (Paleo). The kids would be fine with the pasta version.
