Balsamic Chicken with Tomato & Mozzarella Pasta

Every gardening season I plant about 20-22 tomato plants of various kinds and sizes. Some are just for eating and others I save for canning later on. One of my favorite types of tomatoes are those those little guys, red, orange or yellow grape tomatoes. This year I’ve had a overflowing amount of my favorites, and you can only eat so many of those straight from the garden. One dish that uses a ton of these and is so easy to make is Balsamic Chicken with Tomato & Mozzarella Pasta. I’ve been making it for years and I seriously can’t believe I didn’t already have the recipe on my blog. I have family and friends ask for me to make it when I visit and I make it at least a few times in the summer or early fall when the tomatoes and basil are at their peak. Balsamic Chicken with Tomato & Mozzarella Pasta

One main thing to remember - DON'T FORGET TO TAKE OUT SOME OF THE PASTA WATER - if you do the dish will not be the same. Trust me...it's happened to me many times.
Ingredients
  • 1lb organic boneless chicken breast
  • 4 TB Balsamic Vinegar
  • 2 TB Olive Oil
  • Red pepper flakes (to taste)
  • Salt/Pepper (to taste)
  • 3 garlic cloves minced
  • 1 cup fresh basil - cut up
  • 1 cup fresh shredded Parmesan cheese
  • 12-15 oz fresh mozzarella cut into cubes
  • 2½ cups grape tomatoes sliced in half
  • 1 lb of your favorite pasta - we use bow tie - reserve 1 cup of the pasta water before draining
Instructions
  1. In a air tight container place chicken, garlic, red pepper flakes (to taste) , salt/pepper (to taste) ⅓ of the basil, Balsamic and olive oil - marinate for at least a few hours but it's best to do it overnight
  2. Slice tomatoes - set aside
  3. Cube mozzarella - set aside
  4. Grill marinated chicken then let rest for at least 5 minutes before cubing
  5. Heat pasta water and cook pasta as directed, just before draining take out 1 cup of pasta water - DO NOT FORGET THIS STEP
  6. Once pasta is finished, drain and place back into the large pot
  7. Add cubed chicken, mozzarella, sliced tomatoes, remaining basil and ¾ cup parmesan cheese
  8. At this point add ½ of the pasta water, if you feel you need more then add it - you may not need the whole cup
  9. You can garish with more fresh basil and parmesan if you wish.
