Acorn squash is one of my many seasonal vegetable favorites, and it’s a perfect match for babies. Acorn squash like butternut squash can be one of the first foods you can feed your baby. Acorn squash is so beneficial for babies and very easy to make. It’s fantastic on it’s own or you can easily mix it with fruits and grains to make a complete meal.
The easiest way to make a complete baby food meal is to roast the acorn squash, cook the grain as directed and steam the fruit if need be. Did you know that after your baby turns 6 months old you do not need to cook your fruit? That saves you lots of time!
Once everything is cooked place all ingredients into a large bowl, add 1 cup water and start mixing with your immersion blender. Continue to add a 1/2 cup of water to the mixture until you get the right consistency for your baby.
Once you have the right consistency, place the food into ice cube trays, cover with press and seal and place in the freezer for 24 hrs. Once the cubes are frozen, take them out of the trays and place in a labeled freezer baggie. Then all you have to do is take out as many cubes as you need and defrost.
