Skirt steak is so versatile. You can make so many different types of meals using this one cut of meat. It also makes for a easy weeknight meal since it’s a thin cut of meat and cooks quickly. I recently had the chance to test out a new grass fed beef delivery service from Lil’ Ponderosa and skirt steak was in our combo box.
I made this quick marinade that took about 5 minutes to throw together and I had everything right in my pantry, so no shopping required. You can even place the meat in the marinade and freeze then take out when you are ready to eat which will make prep time less. If you are planning on cooking the Balsamic skirt steak right away make sure you have time to let the marinade soak in for at least 2 hours but overnight is best.
BALSAMIC SKIRT STEAK MARINADE
1/3 cup balsamic vinegar
1 heaping tablespoon ground mustard
2 cloves of garlic minced
2 tablespoons olive oil
1 tablespoon fresh rosemary minced
2 tablespoons brown sugar
Salt & Pepper to taste
Mix all ingredients together than place in a baggie with the skirt steak and let marinade for at least 2 hours but overnight is best.
When cooking you can either grill the skirt steak on medium heat 3-4 minutes on each side and then let set for at least 15 minutes before cutting. If you are unable to grill then you can do what I did and throw it in your slow cooker with the marinade and cook on low for 4-5 hours. Either way, you are in for a treat. I served it up with some garden veggies and quinoa.
