Well, we still need to eat….. but that doesn’t mean you need to slave in a hot kitchen to make sure your family gets a healthy meal. With a few simple ingredients and a bit of imagination you can make some simple healthy summer meals without even turning on the oven. Here are just a few meals I’ve discovered this summer that are easy and with a few tweaks my whole family will love. What are some of your favorite “no cooking required” summer meals?
10 Summer NO COOK Meals
White Bean Roasted Chicken Salad using a store bought rotisserie chicken
Chilled Cucumber Soup with Salami, Feta or cheese of your choice and Olives
Smashed White Bean and Avocado Club is a perfect Meatless Monday dinner
Tapas Plate with Marinated Chickpeas would be fun for entertaining friends
Turkey Salad with Tomatoes and Avocado – use craved turkey such as Applegate farms
Sesame Lime Chicken Salad using rotisserie chicken
Open Faced Tuna Sandwiches using Fennel which gives it a perfect fresh taste
Gazpacho with Goat Cheese would be another great entertaining recipe
Veggie Boats using Cucumbers and either Tuna or Chicken Salad
Avocado Wraps using of course Avocado, broccoli slaw, beans and greens
