When it’s 100 degrees outside, no one wants to cook, and my favorite go to meal on days like that is a salad. Recently on one of those steamy hot days we were invited to a friend’s house for lunch. I volunteered to bring a salad since it’s easy to prepare, and I then I know there will be at least one healthy food to eat. This salad is very hardy and could be eaten alone for a lunch, light dinner or as side dish. My suggestion is to throw in the nuts just before eating or serve on the side in case of food allergies. I also wouldn’t make this salad too far in advance since the strawberries could get mushy.
STRAWBERRY & PROSCIUTTO SALAD WITH MIXED GREENS
1 container of organic mixed greens
1 container of organic strawberries cut in fourths
1 4oz package of prosciutto cut into medium size pieces
4 oz of macadamia nuts cut up
4oz container of goat cheese, crumbled (I found a honey goat cheese that went well with this salad)
1/2 medium red onion thinly sliced
Toss all ingredients together and serve with your favorite Balsamic Vinaigrette.
